    • Tried to make this tonight with the crock pot directions. After two hours on low the meat was still pink! We couldn't eat it for dinner. :(

    • I remade our half-cooked crock pot version in the oven, but it was still greasy & mushy. I believe that the problem with the recipe is the crushed corn chips. They merely add more grease to the recipe and disintigrate as they get moist. Most traditional meatloaf recipes call for some type of bread crumb. I would suggest rather that using crushed corn chips to try something like cornmeal instead. Hopefully that would cut down on the mush/grease issue and help the loaf hold together better, while keeping a similar flavor. The concept is a good idea--just needs some tweaking.

    • The flavor was good, but the meat was dry. There isn't much liquid in this recipe. I think you should probably put a little bit of water in the bottom of the crock pot with the onions so that there is more moisture while the pork cooks.
