We end up with a lot of left-over cornbread when we cook, esp. around new years. Any suggestions on what to do with it? I end up with a freezer full because it's too good to waste.

I don't have the time to cook 2 meals for dinner - I need to cook food that my 1 1/2 yr old can eat and thats appealing to the rest of us (7 yr. old, husband & me).

I read somewhere about "deconstructed dinners" and that is how I cook. Basically, I will make 3 elements and we can mix.
I.e. pot of pasta, pot of veggies (broccoli and carrots), skillet of meat (chicken breast cut in chunks) and a microwave bowl of sauce. The little kids will eat it all separately with just a little butter and salt on the pasta. The adults/teen will all mix it together as a delicious pasta dish with the sauce.
I always make the sauce on the side.Or for Saturday mornings...I make scrambled eggs and I also make mushrooms, spinach, onions with salsa. The little kids just eat the eggs and toast. The adults add on the veggie mixture.
It works pretty well!

I think most of the recipes on here are very easy, granted don't have kids pulling at me.

Microwave Chicken and Dressing. This is easy and tasty.
- package stove top stuffing - chicken breasts - can cream of celery soup.That is all. Make the stuffing per box and spread in bottom of square baking dish. Put chicken on top and cover with soup, ground pepper and wax paper. Microwave for 20 minutes. I made a salad with goat cheese and dry cranberry to complement.
I adapted this from a recipe on here. I can also vouch for the taco soup recipe.
