A friend who values a diversity of foods did something really creative with her kids...she created a food passport for both of them. Bought a little black notebook, pasted their pic inside and wrote many countries, bought some fun stamps. They started out easy with pizza from Italy, nachos from Mexico and have now worked up to Thailand. She made it fun and educational. Maybe this would work?

I bought a special oven mit for the handle of my cast iron skillet. I also keep one designated dish town that I use for drying it off since it leaves black smudges. I wash with hot water immediately after cooking and use coarse salt to scrub off any burnt areas.

To season, which you do when you first buy and twice a year or so after, just coat with cooking oil and bake the pan at 350 for 45 minutes. This will keep it non-stick. I dry it very thoroughly and often coat the pan with some cooking oil.

Thanks for the input. Janis, I like that your mom did it with you and approached in a way that you aren't still struggling with it. We've been totally silent thus far. We are afraid we'll say something that will end up with her developing an eating disorder. Her mom wants her to join a calorie counting website but I'm not sure that is the best thing? Did you talk with other girls your age? She stays at the table much longer than everyone else and isn't really interested in playing outside. We do need to find a physical activity she enjoys.
