A couple secrets. Buy a whole chicken and cut it up. Don't use pieces because it can leave a funny taste. I cook the chicken with salt, pepper, onions, celery and carrots. (Mirepoix) You can add chicken broth or granules too. Just watch the salt you use. For home made dumplings, 3 cups cake flour
3/4 tsp. baking soda
3/4 tsp. salt
6 tablespoons of rendered chicken fat
1 cup cooled broth
Mix flour, baking soda and salt. Cut chicken fat into flour mixture until small and beadlike. Add chicken broth a little at a time until doughy. Knead dough a couple of times.
Roll out dough until paper thin. Add to broth and cook I hour covered.
