To add more Tex-Mex feel, we put a dollop of sour cream on top. My boyfriend and I both ate half a potato each; we agree, this is a very feeling dish.

Don't forget to spray your cooking dish! My enchiladas all stuck to the bottom the first time I made this. I will definitely try some variations on the mixture in the future. My family loves this recipe!

Can frozen meat be cooked in the crock-pot? I know this was possible with a pressure cooker, but I don't know how it translates to a crock-pot;. Thanks!
