Using almost the same recipe we make this as a snack instead of popcorn. Use cooking spray in bottom of dish, place cauliflower, and coat them with cooking spray too. Toss with parmesan and bake as instructed. We actually fight for the last piece.

Vegetables were out of this world when cut around 1/2 inch and baked COVERED for about an hour. A tightly fitted piece of foil will do. The juices from the chicken gave them so much flavor. Will double the amount of veggies next time...yum! A whole tablespoon was too much poultry seasoning for my taste but with less spice, this would be delicious.

Love it! Except for the sun dried tomatoes. It doesn't say exactly how many (medium cup?), so I just threw some in there. Regardless, they tasted like tomato jerky. Maybe I picked the wrong kind of sun dried tomatoes. However, I still love the recipe; I will just omit the tomatoes next time.

Hi Angela! Thank you for pointing out this typo. I have edited this recipe to include an exact measurement for the sun dried tomatoes. For future reference, I use the sun dried tomatoes that are packaged in oil in all my cooking. I find that while they are still dried tomatoes, they have tons of flavor and are not overly dried out. Let us know if you have any other questions!
