2 Tbsp. butter, 1/2 onion, 1 c. rice, 3 c. beef broth, 1 c tomato juice, a dollop of salsa, and 1/2 - 1 c leftover pork or beef. If you have some leftover beef gravy, add a tablespoon or two! Serves 4. -

Is there any way to do this with regular rice? Can I precook the raw rice and then put it in with everything from the start? I don't use minute rice .

Oh and how about with risotto raw? Any ideas or help appreciated. Thanks.

Hi Jason! Yes you could make this with regular rice and not minute rice. To do this, increase the crock-pot to high (if on low) setting during the last 20-25 minutes of cooking and stir in 1 cup white rice and 1 1/2-2 cups water or broth and cook until rice is tender. If you are using wild rice or brown rice, you can add the rice and broth at the beginning of cooking when you add all the other ingredients to the crock-pot. For orzo pasta, stir in 1/2 a cup orzo plus approximately 1 cup water or broth during last 20 minutes of cooking and cook until tender. For both the rice and pasta add more water/broth as needed. Another option would be to cook your preferred rice or pasta the traditional method, according to package directions, and simply stir the cooked rice/pasta into the chicken/sauce mixture right before serving or serve the cooked chicken over the cooked rice.
