Hi Anonymous! You are right that the kale will be cooked when boiled for about 5 minutes. I have edited the recipe to be more clear regarding this information. Regarding the leeks, 2 large leeks will yield approximately 2 cups once chopped. If you can't find leeks an equal substitute would be 1 large white onion.

can the cream be substituted with half and half?

@Anonymous- Yes, half and half, milk, even sour cream or Greek yogurt (or combining any of these substitutes) will work as a substitute for the heavy cream in this recipe.
