I had no beer or apricots. I used veggie stock and lime juice in place of the beer. It turned out great. Served with southern style collards and stuffing.

Rather than simmering on the stove for 30 minutes, I put it in the crockpot and it was delicious when I got home from work!

@Wanda, that's great! You should try cooking barley for your four year old. Use it instead of pasta, cous cous or rice. We do it at our house all the time and we love it!

Hi David! This recipe would work just fine in the crock-pot. Just combine the first 11 ingredients (except the olive oil which is not needed since you do not need to precook anything before adding to the crock-pot) in the crock-pot cover and cook on low for 7-8 hours. Once stew has cooked stir in olives and lemon zest. Serve over couscous as directed.
