This was a great meal! easy to prepare in the morning and ready when we came home. The meat had great flavor. We would add more spice next time and will vary added veggies. All in all a great take on the classic pot roast.

My family loved it!! Very moist meat. Very little ingredients were used which made me worry the flavor was going to be too bland but that was not the case:) I agree with the above comment that I would add more veggies next time.

Hi Reunna! You could simply serve this on a bed of rice with a side of fresh lemon wedges. Another option would be to make a sauce out of the same ingredients in the marinade and omit or reduce the oil or use 2-3 tablespoons butter or use some seafood stock or white wine instead (or a combination of stock, wine and butter).
