Ingredients

  • 1/2 (cup) butter
  • 3 (tablespoon) minced garlic
  • 3 (tablespoon) soy sauce (wheat free tamari for gluten free)
  • 1/4 (teaspoon) black pepper
  • 1 (tablespoon) dried parsley
  • 6 (large) boneless chicken thighs, with skin

Directions

  1. Preheat the oven broiler. Lightly grease a baking pan.
  2. In a microwave safe bowl, mix the butter, garlic, soy sauce, pepper, and parsley. Cook 2 minutes on High in the microwave, or until butter is melted.
  3. Arrange chicken on the baking pan, and coat with the butter mixture, reserving some of the mixture for basting.
  4. Broil chicken 20 minutes in the preheated oven, until juices run clear, turning occasionally and basting with remaining butter mixture.

  • This is a very simple, easy recipe. The only thing I did differently was the fact that I seasoned the chicken with lemon pepper, old bay, granulated onion, and spike. My family LOVED it and came back for seconds.

    You have several options. First, when you're finishing up your meal plan and are in the My Meal Plan tab, as you go through the steps (clicking the Next button), you'll get to a screen where you have various delivery options for your recipes and grocery list. You can select whether you want to print just recipes, just the grocery list, or have print both, have them sent to your iPhone, or have the list sent to your e-mail. Alternately, and I'll admit that I've done this occasionally when I'm not done planning but want something on paper as an easy reminder, I'll just copy and past the text of a recipe into a Word document and print quickly that way.

    Hi Jillian! Yes this would work just fine with boneless skinless chicken breasts. Depending on the size of your chicken breasts you may need to add 5-8 minutes to the over all cooking time. I also suggest flipping the chicken half way through cooking for more even cooking.

    The marinade was very good but as per my shopping list I bought boneless, skinless thighs. The recipe calls for skin on thighs and would have tasted better with the skin on.

    The skin-on bone-in thighs always taste better. But the boneless, skinless thighs are healthier. Isn't that how it always goes though? The less healthy version is always the better one! :)

    @Tari, chicken thighs are much more fatty than breasts. To make this less greasy, you could substitute the thighs for breasts (boneless and skinless) or cut WAY back on the butter OR BOTH. We have chicken thighs all the time in our home and I never use any extra fat (such as butter or olive oil) because the thighs are so fatty. We PREFER thighs though because they have so much more flavor.

    @Anonymous, just turn your broiler on...there's no temp control on the broiler. It's just on or off.

    Excellent! I did some changes, used chicken breasts, and olive oil in a saute pan. Barely coverd pan with olive oil then mixed pepper, two tablespoons oil with 2 tsp soy sauce & minced garlic. Marinated the breasts for 10 minutes and cooked. Pair it with rice where I added a little pepper, butter and garlic. Really went well together

    @Mandy- Baking the chicken in this recipe is a great alternative for broiling. Chicken thighs should be baked at 375 degrees for about 40-45 minutes. If you still wanted to attempt to broil the chicken here are a few tips for using the broiler. Make sure your chicken is 5-6 inches away from the heat source. Broil chicken for 10 minutes then flip and continue cooking for another 10 minutes to ensure even cooking. The biggest tip is to make sure your oven is clean. Anything stuck on your cooking racks or the bottom of the oven, caused from overflow from previous use, will easily burn and smoke under the heat of the broiler.

    We enjoyed this meal! My husband, who is the picky eater in the house, asked me to make it again. I used boneless skinless chicken breasts and had mashed potatoes and green beans for our sides. It was delicious! Kid and picky husband approved!

    This was great! I used skinless chicken thighs and backed for about 30 minutes before broiling for the last 5 minutes due to my poor planning of wanting to bake butternut squash to go with it, but it still came out wonderful. Even my 18 month old liked it.

    I haven't cooked this yet, but I am disappointed in the shopping list. The list did not specify skin-on thighs even though that's what the recipe calls for. The shopping list is not useful if it doesn't match the recipe.

    I followed this recipe to a "T" and it came out terrible. Broiling is a bad idea. My chicken came out dry and flavorless. And the garlic and parsley turned into a black mess.

    Hi Anonymous! I apologize that this recipe did not work out for you. If you wanted to try it again, you could simply bake the chicken. Bake the chicken thighs at 400 degrees for 30-40 minutes.

    Hi Angela! I suggest using the low setting. You may need to cook it a little bit longer but the high setting maybe too hot. Regarding the garlic, 3 tablespoons would be approximately 10 cloves of garlic.
