Ingredients

  • 3 1/2 (pound) beef roast (sirloin, rump, brisket)
  • 1 (10.5 ounce can) cream of mushroom soup (undiluted)
  • 1 (1.0 ounce envelope) onion soup mix

Directions

  1. Place roast in crockpot. Empty dry soup mix and mushroom soup onto roast. Cook on low 10-12 hours or on high 4-5 hours. Serve with gravy from crock-pot.

    I always add onion soup mix to my roast when I put it in the crock pot. I also had about 1/4C of water. After a couple of hours I then add carrots, potatoes & celery.
    It is super easy & the onion soup mix makes seasoning it a snap!

    Made this last night with mashed potatoes and it was delicious!! I did thicken the gravy a bit with some flour, right in the crockpot. Definitely making this again!

    This is a great recipe to use a cheap cut of beef with, such as london broil, chuck roast or such, instead of such a nice piece of meat. The long slow cooking makes it tender regardless. Also, I substitute cream of celery, and it can also be wrapped in aluminum foil and baked slowly in the oven for 2-3 hours if you'd rather. ;D That's the way my grandmother made this.

    @Beth, that's very true! Anytime you're cooking a tougher cut of meat, the best way to make it tender is to either A) marinate it to break down the connective tissue or B) cook it LOW and SLOW as in a crock pot! Beef tenderloin is very expensive and best cooked either on a grill or roasted at high heat to medium rare (130-135 degrees F internally) which really only would take about 20 minutes. The cream of celery substitute is a terrific idea! I use it frequently in casseroles and in my crock pot.

    Been doing it this way for 20+yrs. I also pierce it multiple times with a knife and generously pour worcestershire sauce before adding the soup mix and add a soup can of milk. Don't forget to throw in the baby carrots. My now adult sons think that I have always been the Julia Childs of roast and let's just keep it that way.

    Easy and delicious! I added a splash of water, salt, baby carrots and potatoes and cooked on high the last couple hours. Served with rice and bread. Kids loved it and ate their carrots willingly!
