Ingredients

  • 1 (cup) potatoes, peeled, sliced (omit for low carb)
  • 1 (cup) onion, chopped
  • 2 cloves garlic, pressed
  • 1 1/4 (teaspoon) paprika
  • 1/2 (teaspoon) caraway seeds
  • 1 vegetable bouillon cube (look for gluten free, if needed)
  • 3 (cup) water
  • 1 (cup) peas, fresh or frozen
  • 1/2 (teaspoon) black pepper
  • 2 (cup) tomatoes, fresh, chopped
  • 3 1/2 (teaspoon) dried marjoram
  • 1/4 (cup) safflower oil
  • 3 (cup) egg noodles, cooked (use gluten free, if needed)

Directions

  1. In large saucepan, combine all the ingredients except the noodles. Cook over medium heat, covered, for 30-40 minutes. Serve over hot noodles.

    Is this recipe correct? I can't imagine how you could cook 5 cups of vegetables in in 2TB water for 40 minutes, especially the potatoes...?? I changed it to 4 cups and it was a nice dish.

    @Anonymous- Thank you for pointing out this typo. I agree with you that 2 tablespoons of water is certainly not enough to cook all these vegetables in. I have adjusted the recipe to show 3 cups of water because as the tomatoes cook down they will create a natural liquid to make this like a stew. However if you would like this a little more on the soup side, then certainly add more water as you wish!

    Excellent for rainy day. A nice very filling cheap meal. I got about 10 cups but if u do 4 servings it's about 350 calories. I used 2 cups of noodles , 4 potatoes and 2 onions.
