Ingredients

  • 1 (pound) sweet chicken sausage, cut into 1/2-inch pieces
  • 1 (medium) red bell pepper, cut into 1-inch strips
  • 2 (whole) celery stalks, sliced
  • 6 (medium) Italian plum tomatoes, cut into wedges
  • 2 (teaspoon) dried oregano leaves, crushed
  • 1 1/2 (cup) chicken broth
  • 4 (cup) cooked rice

Directions

  1. Preheat oven to 425 degrees F. Spray roasting pan with vegetable cooking spray.
  2. Mix sausage, pepper, celery, tomatoes, oregano and 1/2 cup broth in pan.
  3. Roast 30 minutes or until done, stirring once.
  4. Stir in remaining broth. Serve with pan juices over rice. Garnish with freshly grated Parmesan cheese, if desired.
