Ingredients

  • 3 (tablespoon) butter
  • 1 medium onion, chopped
  • 8 mushrooms, thinly sliced
  • 1 clove garlic, chopped
  • 1/4 (pound) thinly sliced prosciutto, cut into strips
  • 1/4 (pound) thinly sliced hard salami, cut into strips
  • 4 boneless skinless chicken breast halves
  • 1 (cup) all-purpose flour
  • 1/48 (oz) salt and pepper to taste
  • 1/2 (cup) dry sherry
  • 1 (cup) chicken broth
  • 1/2 (cup) heavy cream
  • 1/2 (cup) pasta sauce
  • 1 (tablespoon) butter
  • 2 (tablespoon) chopped fresh parsley

Directions

  1. Melt 3 tablespoons butter in a large heavy skillet over medium heat. Saute onion until soft and translucent. Stir in mushrooms, garlic, prosciutto and salami. Dredge chicken breasts in flour, and place in pan. Season with salt and pepper. Cook chicken breasts 5 minutes on each side. Pour in sherry, and cook until liquid is reduced by half. Stir in chicken broth, cream and marinara sauce. Simmer until sauce is reduced to your liking. Stir in 1 tablespoon butter, and sprinkle with parsley.

    We rarely eat prosciutto. This was great. Had some prosciutto with melon and a glass of red wine while it was cooking.

    These were unbelievable. So easy and yet, restaurant quality. I would highly recommend this dish to anyone - perfect for dinner with friends. We served it with pasta and everyone loved it.

    Be careful not to let the sauce reduce too long it gets strong. I didn't have prociutto, and used all salami--I don't recommend all that salami though.

    Prosciutto and salami are both very salty foods, and sometimes chicken broth can be too. Next time omit these meats or use less amounts. Also check that the broth you are using is a reduced sodium broth.

    Loved it!!! I didn't use sherry or mushrooms and family raved about it. Husband said sauce is high quality like you'd get in an Italian restaurant. Next time I might add some red pepper flakes.

    After cooking the chicken five minutes on each side, do you then keep it in while adding the cream broth and sauce and reducing?
