Greek-Style Baked Salmon with Feta

Ingredients

  • 4 (5.0 ounce fillet) salmon fillets, with skin
  • 2 (tablespoon) olive oil
  • 1 (whole) roma tomatoes, diced
  • 1/2 (cup) crumbled feta cheese
  • 1/2 (whole) red onion, diced
  • 2 (whole) Kalamata olives, sliced
  • 1 (tablespoon) lemon juice

Directions

  1. Preheat an oven to 350 degrees F (175 degrees C).
  2. Brush each salmon fillet on all sides with olive oil and arrange into the bottom of a glass baking dish with the skin side facing down. Season the salmon with salt and pepper. Scatter the tomatoes, feta cheese, onion, and olives over the fillets; sprinkle with the lemon juice. Optional: you may add basil or Greek oregano for more flavor.
  3. Bake in the preheated oven until the salmon flakes easily with a fork, about 20 minutes.

    Chef Heather do you have what is called in Greek "Bakaliaro" or cod? Specifically, I'm looking for the recipe that calls for salted cod to be soaked (in milk?) and then battered & fried? I could ask my mother but she eyeballs everything and I end up writing down a messy recipe which undoubtedly fails.

    @Anonymous. Soaking any fish in water or more importantly milk helps remove some of the fishy aroma and taste that is sometimes associated with fish. This is the process found in most Greek "Bakaliaro" recipes. Here is a simple recipe for Greek "Bakaliaro" that you'll have to try it and let us know how it turns out.

    Greek "Bakaliaro"

    1 1/2 - 2 pounds dry salt cod
    1 1/2 cup all-purpose flour
    1 cup water
    1 pinch salt
    1/4 teaspoon baking powder
    Vegetable oil for frying (as needed)

    Cut the cod into 4-inch sections. Place in a glass bowl, cover with water, and soak overnight, changing the water 2-3 times during soaking period. After soaking, drain and throw away the water. Put the cod in a pot and cover with water. Bring to a boil, then remove from the heat and lift out the cod with a slotted spoon.

    Remove the bones and skin.

    In a medium bowl, combine the flour, 1 cup water, salt, and baking powder to make a thin batter. Dip the cod in batter and fry in warm oil (about 1/2 inch deep) on both sides, then lower heat and cook till tender, turning once again.
