Ingredients

  • 2 (tablespoon) Extra Virgin Olive Oil
  • 1/2 (medium) onion, diced
  • 1 1/2 (pound) shrimp, cooked - peeled, deveined, and cut in half
  • 8 (8 inch) flour tortillas, warmed
  • 1/2 (teaspoon) ground cumin
  • 3/4 (cup) chopped fresh cilantro
  • 1 (lime) lime, juiced

Directions

  1. Heat a large skillet over medium high heat. Add olive oil. Add the onions to the pan; cook 5 minutes or until the onions are translucent. Stir in the shrimp and cumin; cook 4 minutes or until heated through.
  2. Serve in heated tortillas. Sprinkle with cilantro, lime juice, and season with salt and pepper.

    Super easy and the whole family loved them...like a road side taco stand in Mexico. Just be carful of the adobe peppers very hot, all the seeds are in them. I sqeezed out the juice and did not use the actual peppers. Then it is more like mild instead of moi caliente!

    @Brandi and Elizabeth~ Brandi your suggestion to use just the juices from the canned chipotle peppers in adobo sauce is a great suggestion! Another tip is to use less peppers or rinse and deseed the chipotle peppers before cooking with them. And here’s another trick: when I buy a can of chipotle peppers in adobo sauce and don’t use them all, I place the reaming peppers and sauce in my food processor. I then puree the peppers and place the pureed mixture in ice cube trays. I pop the trays in the freezer and freeze them so that whenever I need a small amount of chipotle peppers in adobo sauce I always have some on hand and none go to waste.

    Hi - what is everyone talking about chipotle peppers? I don't see them in this recipe. Am I missing something? Also - I am new - how do you print the recipes?

    @Devon- We recently revised several of our recipes to be more 'kid friendly' which meant deleting certain ingredients. This recipe originally called for 1-2 canned chipotle peppers in adobo sauce chopped and cooked with the onion. Since these peppers can be a bit too spicy for kids we took them out. But feel free to add them or add in 1/4 teaspoon ground chili powder or 1/8 teaspoon ground cayenne pepper (or more if you prefer) for extra flavor and heat.

    Haven't tried this recipe yet, but here's an idea. Mix together 1/4 cup light sour cream & 1/4 cup plain non-fat yogurt (regular or Greek). Add the chopped fresh cilantro, and you'll have a healthy great sauce for these tacos. This is a take on the sauce that is served with the fish tacos & my fav taco restaurant.
