Ingredients

  • 3/4 (pound) ground beef
  • 1/2 (cup) barbeque sauce
  • 1 (tablespoon) dried minced onion
  • 1 (12.0 ounce package) refrigerated biscuit dough (smaller size biscuits are best)
  • 1/3 (cup) shredded Cheddar cheese

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease the cups of a muffin pan.
  2. In a large heavy skillet over medium heat, cook beef until evenly brown. Drain excess fat. Stir in barbeque sauce and dried onion. Simmer for a few minutes over low heat.
  3. Flatten each biscuit, and press into cups of the prepared muffin pan. Make sure the dough comes to the top of the sides of each cup. Spoon a portion of the meat mixture into each dough cup.
  4. Bake in preheated oven for 12 minutes. Sprinkle with cheese, and bake for 3 more minutes.

    Quick and easy. Just didn't care for it as much as I wanted to. I may try again but make the dough MUCH thinner or tweak something else.

    My kids *LOVED* these too! I forgot to buy the cheddar cheese though. My kids aren't about trying new items all so much, so I had them help me make these, and with them seeing exactly what was in it, I'm sure that helped! My husband even was impressed. Easy to make and yummy too!

    @Stacy and Michelle~ Hi this is Chef Heather from Food on the Table. What great suggestions you both have! I think using beef seasoned with taco seasoning and adding diced bell peppers to this dish is a great way to change things up. You could also substitute enchilada sauce or salsa for the barbeque sauce and add black beans, corn, and/or tomatoes for a more filling meal with Southwestern/Mexican flavors!

    I replaced the barbecue sauce with my meatloaf sauce--2 cups ketchup, 3 tablespoons brown sugar. It was very tasty.

    I really enjoyed these. My 3 kids not so much. I might have added too much minced onion. Maybe next time I will go the mini taco route instead. I also put the cheese on top and baked it all for 15 minutes.

    My kids loved these...I added red bell pepper and sweet onions to the meat and left the top open like a cup. I baked them in a muffin tin and then froze them in two packs for them to take out and pop in the microwave for a afternoon snack. They asked for more as they pulled the last pack from the freezer!

    nice and easy. Before adding cheese, helped the rising dough by squishing the cup back into form then adding the cheese. Really good with Jack Daniels BBQ Sauce.

    My family loved these and have asked for it again. I didn't have a problem with the dough as many others have but I did make the cup part thin while the lip of the cups were more crust like. I can foresee many variations available of this recipe as well. I'm not a big BBQ fan so I may try taco seasoning next time. Could also add in veggies. The possibilities are endless.

    I used 2 large chicken breasts that I boiled and shredded. It was awesome. Although, I must not have bought big enough biscuits. I had to use 2 for each cup. Good thing I got 2 packages ;)

    I use the small size. They just fill the cup perfectly and I do NOT want the dough covering the filling anyway! I use a normal muffin tin and not the huge size.

    These are all very good suggestions! Another idea to try would be to go Italian! Treat it as a calzone and add pizza sauce, provolone or mozzarella cheese and pepperoni or italian sausage.

    I particularly liked the idea of using crescent rolls. Puff pastry would be another great alternative to the biscuit dough. It would be less doughy. Try also filling it with chopped spinach, cheese, a little mayo and artichoke hearts!

    We really liked this! But to keep things super simple, we used sloppy joe mix with the ground beef. Two quick things: 1) I didn't have enough dough to create the "covered look" as the photos show, ours were true open faced cups (and were great that way!); 2) I'd get two cans of biscuits next time... with only 10 cups we had a fair amt of left over sloppy joe meat. Not a big deal - great for leftovers.

    I just made these last week and the only biscuit dough I had was the large (Grands) biscuit. I think this recipe intends for you to use the smaller sized regular biscuits, but I'm wondering if the people who are complaining that the recipe was too doughy may be using the larger sized ones. Maybe the recipe could be amended to specify the smaller size. I know it says 12 oz can, but it couldn't hurt to add the other info in... Just my two cents :)

    Made this tonight. Kids loved helping in the kitchen with me. And it was a hit at the table too. We spent the meal thinking up fun ways to use this concept with other ingredients like taco seasoning and black beans, or the most tasty version was to dice up apples, brown sugar, cinnamon and butter! Yum!

    WE had these for dinner last night and even my pickiest eater was asking for more. The store only had the Grands (big) biscuit cans so I got one of those. The biscuits were very easy to peel in half and fit in the cups just fine. I did add a little more BBQ sauce and I seasoned my meat while cooking with salt, pepper, and garlic.

    These were super tasty. I mix bbq and onion all together then fried it then but it in the oven on a cookie sheet to get crispy then but in to the biscuit dough I had two use two packs because I also didn't have enough dough in each cup. My husband gave it between a 4 and 5 stars. Great meal for $5 for two people to eat.

    I have made this a few times and we love it. This last time, I used a rolling pin to roll out he biscuits and it worked awesome! Much better distribution of the dough. Big hit!

    Made crescent roll dough in the bread maker. Amazing. I'm only making sliders like this (in the muffin pan) from now on. Also added finely chopped mushrooms to the ground beef.
