One-Skillet Smoked Turkey and Rice with Vegetables

Ingredients

  • 1 (pound) turkey smoked sausage, casings removed
  • 2 (medium) carrots, diced
  • 1 (medium) zucchini, diced
  • 1 (tablespoon) extra virgin olive oil
  • 1 (8.0 ounce can) diced tomatoes, undrained
  • 2 (cup) chicken broth
  • 1 (cup) uncooked instant rice
  • (to taste) salt and black pepper

Directions

  1. In large skillet brown turkey sausage over medium high heat, breaking meat up as it browns, about 5 minutes. Drain and reserve. Heat olive oil in same skillet and saute carrots and zucchini for 3-4 minutes. Stir in tomatoes, broth and rice. Season with salt and pepper. Bring to a boil, cover and remove from heat. Let rest 5 minutes off of heat. Fluff with fork and serve.

    Hi Brett. It looks like you have found a typo. 8 cans of tomatoes is way too much for this recipe. I have adjusted the recipe to show a more appropriate amount for this recipe, 1 (8 ounce) can.

    Would it work to use short grain brown rice and cook it longer? Or just cook the brown rice on the side?

    Hi Helen. Traditional brown rice usually takes 50-60 minutes to cook properly, so I would suggest cooking it separately and then just mixing it in with the cooked veggies and sausage. However, if you did want to cook brown rice with the sausage and veggies, you could use instant or 'boil in a bag' brown rice and prepare the recipe as directed above and letting it cook for about 10 minutes, or according to package directions.

    I ended up cooking the brown rice on the side and cut the broth to one cup. I mixed it in at the end, and it was wonderful! No leftovers! Also added a little creole seasoning. The family asked to keep this one in the "rotation"!

    I used some different veggies and would cook the rice separately next time but it was a hit!
