Ingredients

  • 1 (pound) ground turkey
  • 1/2 (cup) chopped green bell peppers
  • 1/2 (cup) chopped onion
  • 1 (20.0 ounce) package frozen broccoli, carrots, and cauliflower
  • 1 (5.0 ounce can) potatoes
  • 2 pita breads (8 inch rounds, cut in half)

Directions

  1. Brown turkey in skillet for 10 minutes. Add peppers and onion and saute until onions are transparent, approximately 5 minutes. Add frozen vegetables and potatoes and cook till tender, 5 minutes. Cut 2 pita breads in half, toast lightly. Fill with turkey/vegetable mixture.

  • This was OK - I was surprised there weren't any spices added to the meat. I added garlic, a little season salt and pepper. Even then, it was a little bland for my taste. The kids liked it, but my husband and I added hot sauce and it wasn't bad. I also used an oriental vegetable mix because we're not fans of the cooked carrots.

    LOVED this! I cut potatoes and carrots and used about 1 TBLSP of olive oil and a little butter and 'fried' them in a separate pan. Used fresh broccoli, pepper and onion in with the turkey. AND we didn't have time to get any pita bread--so we just ate it all mixed together. It would have been even excellent on rice had I planned ahead a bit better. My kids were not crazy for it, but they all had a little. My husband said he would love to have that again. I thought it was spectacular! We will be making it again!

    Personally, I thought it was a little plain. I added tatziki sauce to them. Boyfriend loved it, took some for lunch the next day.

    I would recommend using some sort of sauce or dressing to keep these from being dry. I recommend a vinaigrette or ranch dressing.

    Like one of the posters above, I'd like a tatziki sauce with this, and would probably add some Mediterranean herbs to the mix, as well. I used to get veggie wraps with tatziki from a place near where I used to work, and I was just thinging yesterday how much I missed them!
