Ingredients

  • 1 (medium) onion, chopped
  • 2 (tablespoon) butter
  • 1 (pound) chicken tenders
  • 1 (12.0 ounce jar) picante sauce
  • 1 (3.0 ounce package) cream cheese, softened
  • 1 (teaspoon) chili powder
  • 2 (cup) cheddar cheese, shredded
  • 8 (8 inch) flour tortillas

Directions

  1. Heat oven to 350 degrees. Cook chicken and onion in butter in large skillet, about 5-6 minutes. Season with chili powder. Chop or shred chicken into small pieces. Spread cream cheese over tortillas, top with chicken, onion, picante sauce, and 2 tablespoons of cheese. Roll each tortilla and put on 12 x 7 inch baking dish. Top with remaining cheese and bake until cheese is melted, 15-20 minutes.

    this seems to be my go to recipe. It has become a favorite with the family. Instead of cheddar cheese, I use the mexican blend one. Yum! I have yet to try it with the santa fe cooking creme, only because I have never heard of it before and not sure where to find it in the grocery store.

    This is delicious! The rolls came out really moist. The tortillas I used were a little big (about 9" burrito tortillas), so they fit very snuggly in to the pan.

    These definitely turned out better than I expected. They are basically enchiladas without the sauce. The chicken turned out juciy and flavorful, and the salsa and cheeses in the roll-ups added an extra something. Definitely something to try again!

    Truly as delicious as everyone says! I used boneless skinless chicken breast (1 large piece) and had enough to fill 10 tortillas. The cream cheese adds a very nice creamy texture. Will definitely be making this dish again!

    I cut the chicken up before cooking and of course I over cooked it ( got busy doing other stuff while meat simmered on the stove), anyway it still turned out GREAT! My 5,6,14,20 and husband all loved it! You cannot mess this up! Make sure you make enough!
