Easy Bbq Southwestern Chicken

Ingredients

  • 4 skinless chicken leg quarters
  • 1 (cup) bbq sauce
  • 1 1/2 (teaspoon) southwestern seasoning
  • 1 (teaspoon) each salt and pepper
  • 1 (teaspoon) chicken fajita seasoning

Directions

  1. Preheat oven to 400°F. Marinate leg quarters in all ingredients for 15 minutes.
  2. Place a sheet of foil on a cookie sheet, and wrap leg quarters in foil. Seal it up tight to make sure there are no openings.
  3. Bake for 45 minutes. When done spoon remaining sauce over chicken till glaze appears, then serve.

    This was delish!! I used Emeril's southwestern seasoning mix recipe. It makes a big batch that can be used several times. As for the chicken fajita seasoning, I used a plain old packet of fajita seasoning (it did not specify "chcken" on the pack but worked fine. I lined the pan with foil, then just covered the pan with foil & uncovered during the last few minutes of cooking. I did not wrap the chicken legs. We have made this several times & LOVE it!

    Hello! Thank you Anonymous for sharing your tips and suggestions for this recipe and seasonings. For others their are several brands of 'southwestern seasoning' sold at most stores. McCormick and Grill Mates makes one version, Mrs. Dash has a version that they call "Southwest Chipotle" and I know my local grocery store brand has their own version. Same with the fajita seasoning, you can find different brands and some brands call it just fajita seasoning while others my say specifically beef or chicken fajita seasoning. You may find these seasonings with the other jarred spices or they might be located with the "packet" seasonings. You can also just make your own homemade spice blend.

    And here is my go-to recipe for a homemade Southwestern Seasoning spice blend (that uses common spices found in most spice racks):

    Southwestern Seasoning Blend

    4 tablespoons chili powder
    4 tablespoons paprika
    4 tablespoons ground cumin
    2 tablespoons ground coriander
    2 tablespoons dried oregano
    1 tablespoon garlic powder
    2 tablespoons onion powder
    2 teaspoon cayenne pepper
    2 teaspoon crushed red pepper
    2 teaspoons sea salt
    2 teaspoons black pepper

    Combine all ingredients in a bowl, and mix well to blend. Store in an airtight container until ready to use.
