Ingredients

  • 2 (whole) avocados - peeled, pitted, and cubed
  • 2 (whole) tomatoes, diced
  • 1 (whole) sweet onion, chopped
  • 1 (pound) small shrimp, peeled, deveined and halved
  • (to taste) salt and pepper
  • 2 (tablespoon) lime juice

Directions

  1. In a medium pan, saute shrimp in a small amout of olive oil until opaque, about 3 minutes. Allow to cool completely.
  2. Stir together avocadoes, tomatoes, onion, and shrimp in a large bowl. Season to taste with salt and pepper. Stir in lime juice. Serve cold

    I had to reduce the amount of onion though because it was a little too much for me, but other than that it was REALLY good!

    My husband loved this on an english muffin, with a little bit of dijon. He's eaten three of them already. I love the cilantro idea, going to add that to the rest of the mix!

    I added cilantro and turkey bacon crumbles and made a lime vingarette. Served it with crusty bread. Big hit!

    This dish was pretty good, it looks not so good when I made it, but it did taste pretty good, all flavors blend together. I will make this again for sure!!

    This came out well, the avocados we used were a little over ripe and didn't hold up well during the mixing but the flavor was very nice. Perhaps a bit too much onion but overall pleasant. An excellent summer side dish or light lunch.

    Extremely good. Seemed to be missing something though; maybe more real lime juice or a little more salt. I added lime beer salt to my bowl. Was better next day. Avocados stayed firm & fresh w/ recommended lime juice. Will definately make again!
