Ingredients

  • 1 (pound) cube steak
  • 2/3 (cup) chopped fresh mushrooms
  • 1/2 (cup) fresh parsley
  • 1/2 (cup) chopped onions
  • 1/2 (cup) grated Parmesan cheese
  • 1 (10.5 ounce can) condensed beef broth
  • 2 (tablespoon) cornstarch
  • 2 (tablespoon) water

Directions

  1. Pound steak thinly. Sprinkle with a handful of mushrooms, parsley, onion and cheese. Roll up and fasten with toothpicks. Brown in a large skillet on all sides.
  2. Add beef broth and simmer for 30 to 45 minutes. Combine cornstarch and water to make slurry. Remove steak and whisk in slurry to make gravy.

    I liked it, my husband was not crazy about it. I made brown gravy and added about 1/2 Cup to this recipe to cut down the Asian taste.

    Made these tonight and they were delish!! I did alter the recipe, I deglazed the saute pan with some red wine and I just used a jar of beef gravy and braised these after I browned them for about an hour. I also seasoned the meat with some all purpose seasoning to kick up the flavor. Will make again.

    Kids liked it which is always a plus. I sauteed the onions and mushrooms before rolling them up in the cube steak. I'd do this recipe again.

    @Shannon- Cube steak tends to be a tougher cut of meat. Make sure you thoroughly pound it out with a meat mallet before using or let it marinate for several hours.

    Here is a simple marinade you could use:

    1/4 cup canola oil
    1/4 cup Worcestershire sauce
    3 tablespoons soy sauce
    2 cloves garlic, minced
    1/2 small onion, minced
    3 tablespoons brown sugar

    Whisk together all ingredients. Place steak in large zip-top bag and pour marinade over meat. Seal and place in refrigerator to marinate for at least 2 hours. Discard marinade after use.
