Ingredients

  • 1 egg
  • 3/4 (cup) milk
  • 1 (cup) shredded Cheddar cheese
  • 1/2 (cup) quick cooking oats
  • 1 (teaspoon) salt
  • 1 (pound) ground beef
  • 2/3 (cup) ketchup
  • 1/4 (cup) brown sugar, packed
  • 1 1/2 (teaspoon) prepared mustard

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine the egg, milk, cheese, oats and salt. Add the ground beef, mixing well, and form this mixture into eight miniature meatloaves. Place these in a lightly greased 9x13 inch baking dish.
  3. In a separate small bowl, combine the ketchup, brown sugar and mustard. Stir thoroughly and spread over each meatloaf.
  4. Bake, uncovered, at 350 degrees F (175 degrees C) for 45 minutes.

    @Kendra- Quick oats are a great substitution for bread or breadcrumbs called for in recipes such as meatloaf, meatballs, or burgers! I also like to grind oatmeal (in my food processor or blender) and use it to bread chicken breasts or tenders. It adds great flavor and a crispy texture! I love these 'tricks' because oatmeal is something I always have on hand and is much cheaper than canned breadcrumbs.

    We actually had these tonight--I was trying to stick to soft foods because one of my guys lost his second tooth today. :-) The really were incredibly juicy and the flavor was excellent! Only thing I did different was to add a splash of Worcestershire, and next time I'd bake them on a rack so the fat could drain as they cook. Delicious, though!

    I was skeptical - I am a traditional meatloaf girl. This, however, was GREAT. Flavorful, unique, sweet and appealing to my kids. Sneak in shredded carrots or peppers and onions, mushrooms...it works well to get good fiber and veggies into little bellies

    Another fun way to serve these meatloaves as 'mini' is to cook them in cupcake pans! Add some mashed potatoes on top and you have a super cute meal that the kids will definitely love!

    Can you substitute another ingredient for ground beef, such as ground turkey and chicken or even eggplant? Would it end up being the same time and temp?

    @Anonymous, you can surely substitute other things for ground beef. If you use ground chicken or ground turkey, remember it's much leaner than ground beef so you don't want to overcook it or it will be dry. Ground pork would be a great substitute because it still has some of the fat which will keep it moist. If you're using chicken or turkey it must reach an internal temperature of 165 degrees F. The temperature can remain the same, just check the time with your instant read thermometer. You can use eggplant as a substitute also. Use 2 large eggplants and cut them lengthwise and roast them until soft at 375 degrees. Scoop out the flesh and mix with the rest of the ingredients. You will need to add 2-3 extra eggs to make this hold together. Pour into loaf pans and bake at 375 until it sets.

    This was a big hit. I did make a change, though. I doubled the recipe, spread the beef mixture into the 9x13 pan and then covered with the sauce.

    I changed this recipe up to suit my needs. I used Lipton beefy onion soup recipe secrets mix, breadcrumbs, and worchestershire sauce and molded the mixture into a 12 cup muffin tin. If you do it this way, make sure you put it on a cookie sheet (with sides) and cover it with aluminum foil to reduce mess.

    @Stef, that's a really great tip. I find that when I make a meatloaf (or even mini-meatloaves) sometimes there will be a lot of fat bubbling over the edges of the pan. To decrease the fat, I will cook it for about 20 minutes, then carefully drain the grease out of the pans and return it to the oven or even remove the loaves from the pans after they have cooked enough to hold together and then place them on a sheet pan to finish cooking.
