Ingredients

  • 3 (pound) beef chuck roast
  • 3 russet potatoes, peeled and cut into 1" pieces
  • 2 large carrots, peeled and cut into 1" pieces
  • 1/2 (cup) water
  • 1 (1.0 ounce envelope) onion soup mix

Directions

  1. Put all vegetables in bottom of crock pot and place meat on top. Sprinkle with onion soup mix and add water. Cook on low for 10-12 hours, or on high for 5-6 hours.

    I'm thinking something is wrong......50 cal per serving and 0 fat for a beef stew?? I think, not possible.

    You are right Donna, the nutritional information on this recipe is off. I am thinking the calories should be somewhere around 400 per serving. However, I am going to forward this recipe to our staff nutritionist so that they can provide more accurate nutritional data.

    @Anonymous, yes. The roast will make it's own juices! Or you can add some beef stock.

    I like bold flavors and I felt this was lacking but it could be because I added more potatoes. Overall I really enjoy this and it was very easy. I will cook this again And add a bay leave and onion.
