Sausage and Spinach Soup

Ingredients

  • (as needed) vegetable cooking spray
  • 1/2 (pound) chicken sausage, cut into 3/4-inch pieces
  • 4 1/2 (cup) chicken broth
  • 1/2 (teaspoon) dried oregano leaves, crushed
  • 1/2 (large) large onion, chopped
  • 1 (medium) carrot, sliced
  • 1 1/2 (cup) fresh spinach leaves, coarsely chopped

Directions

  1. Spray saucepot with cooking spray and heat over medium-high heat 1 minute. Add sausage and cook until browned, stirring often. Pour off fat.
  2. Add broth, oregano, onion and carrot. Heat to a boil. Cover and cook over low heat 10 minutes or until vegetables are tender.
  3. Stir in spinach and cook 1 minute.

    This was absolutely wonderful. I deviated a bit in the prep, after heating the sausage, I removed it from the pot & then added a Tbsp of olive oil & caramelized the onion & carrots, adding a splash of the chicken broth to aid the process. Anything in a a one pot prep is always a bonus. FYI, I entered this into Weight Watchers Points Plus calculator & its actually 0 points per serving!

    I am not much of a sausage person so it was a little meaty for me but my husband couldn't get his face out of the pan! I also added some quinoa to make it a little more hearty.

    Calories can't be right? Chicken broth alone has around 40 calories per cup.

    I doubled the onion and carrot, added two stalks of celery, fresh cracked pepper, and swapped in italian turkey sausage for the chicken sausage. Added a ton of flavor, but still very healthy. I also softened the veg. in olive oil before adding back in the sausage, and then deglazed the pan with broth, and finished off the recipe. Great!

    I substituted smoked turkey sausage and it tasted amazing! Also, from my calculations one serving is 3 Weight Watcher points. The nutritional info on this recipe is incorrect.

    I also added quinoa into this recipe and that absorbed some of the broth and added more protein to the dish. Overall, a hearty winter soup that turned out delicious. *For the not healthy, I browned the chicken sausage in bacon grease. Gave it some extra flavoring which added quite nicely to the dish.
