Ingredients
- 3 (tablespoon) extra-virgin olive oil
- 1 (pound) sweet Italian sausage, casings removed
- 5 (clove) garlic, sliced thin
- 1/2 (teaspoon) red pepper flakes
- (to taste) Salt and pepper
- 1 (pound) fettuccine
- 1 (large) bunch broccoli rabe (about 1 pound), trimmed and cut into 1‑inch pieces
- 1/2 (cup) grated Parmesan cheese
Directions
- Bring 4 quarts water to boil in large pot. Meanwhile, heat 1 tablespoon oil in large skillet over medium-high heat until just smoking. Cook sausage until browned, breaking it into small pieces with wooden spoon, about 8 minutes. Add garlic and pepper flakes and cook until fragrant, about 30 seconds. Remove from heat, cover, and keep warm.
- Add 1 tablespoon salt and fettuccine to boiling water and cook until nearly al dente. Add broccoli rabe and cook until tender, 2 to 3 minutes. Reserve ½ cup cooking water, drain pasta and broccoli rabe, and return to pot. Add cheese, sausage mixture, and remaining oil and toss to combine, adding reserved pasta water as needed. Season with salt and pepper. Serve.
