Ingredients

  • 4 (6.0 ounce) boneless skinless chicken breast halves
  • 1/4 (teaspoon) salt
  • 1/4 (teaspoon) lemon-pepper seasoning
  • 3 (tablespoon) vegetable oil
  • 1 (medium) onion, sliced
  • 2 (tablespoon) packed brown sugar
  • 1/2 (cup) shredded Monterey Jack cheese

Directions

  1. Sprinkle chicken with salt and lemon-pepper. In a large skillet, cook chicken in oil for 13-15 minutes or until juices run clear; remove and keep warm.
  2. In the same skillet, saute the onion and brown sugar until onion is golden. Top chicken with caramelized onions and cheese, and place under broiler until cheese melts.

    Sandra, I agree with your son, I think some sauteed sliced mushrooms would taste wonderful with this! Also, I think that if you don't have lemon pepper seasoning on hand you could substitute a nice chicken grill seasoning instead.

    I made some rice because the sauce came out runny for me (not at all complaining I promise) I thought the rice would help soak up the leftover sauce flavor from the chicken. It was really good. I also made brusselsprouts (which I love). I boiled the brusselsprouts for a few, cut them in half and added them to any leftover onions I had. (I used the same pan I carmalized the onions/mushrooms in and added a little butter, while using any sauce left in the pan). It was all good, husband took leftovers to work.

    loved the recipe made it twice. ADVICE! oil the chicken and use a rub or the seasonings and then wrap in foil and bake it 350 for 30 minutes. Do the rest of the recipe as shown. WOW it was amazing.

    Quick, easy, and good. Instead of putting under broiler I just added the chicken back to skillet scooping the onions on top and then put the grated cheese on and put the lid on top for 2 minutes melted and was perfect. Nice one pan meal and no need to turn the oven on this way.

    enjoyed....think I went a little overboard with the lemon-pepper seasoning though! didn't allow as much room for the taste of the onions, but hubby went back for seconds so I guess it was okay....I served with some rice

    This was delish!!! I'm a clean food/low carb eater so I try to avoid sugar. I cut the BS in half. Worked for hubby too cuz he doesn't like sweet meat (except me!) the caramelized onions were so good I put them with spinach on a MG thin bread for breakfast this morning. Yum!
