Ingredients
- 1 1 (medium) yellow squash, sliced
- 1 1 (medium) green zucchini, sliced
- 1 1 (medium) red bell pepper, chopped
- 1 1 (medium) green bell pepper, chopped
- 1 1 (medium) yellow bell pepper, chopped
- 1 1 (medium) red onion, chopped
- 2 (tablespoon) 2 (tablespoon) Extra virgin olive oil
- 2 2 potatoes, diced
- 1 1 carrot, sliced
- 2 (teaspoon) 2 tsp italian seasoning
Directions
- Preheat oven to 400 degrees F. Slice all veggies and place in pan. Drizzle with olive oil and season with salt and pepper.
- Bake at 400 degrees for 30 minutes. Serve alone or over noodles.
