Ingredients

  • 1 1 (medium) yellow squash, sliced
  • 1 1 (medium) green zucchini, sliced
  • 1 1 (medium) red bell pepper, chopped
  • 1 1 (medium) green bell pepper, chopped
  • 1 1 (medium) yellow bell pepper, chopped
  • 1 1 (medium) red onion, chopped
  • 2 (tablespoon) 2 (tablespoon) Extra virgin olive oil
  • 2 2 potatoes, diced
  • 1 1 carrot, sliced
  • 2 (teaspoon) 2 tsp italian seasoning

Directions

  1. Preheat oven to 400 degrees F. Slice all veggies and place in pan. Drizzle with olive oil and season with salt and pepper.
  2. Bake at 400 degrees for 30 minutes. Serve alone or over noodles.
