Ingredients

  • 6 (tablespoon) sun-dried tomatoes packed in oil
  • 2 (tablespoon) capers, drained
  • 4 (fillet) tilapia
  • 2 (tablespoon) lemon juice
  • 4 (tablespoon) kalamata olives, pitted and chopped

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C). In a small bowl, stir together the sun-dried tomatoes (reserve 1 tablespoon of the oil), olives and capers. Set aside.
  2. Place the tilapia fillets side by side in a baking dish. Drizzle with oil and lemon juice.
  3. Bake for 10 to 15 minutes in the preheated oven, until the fish flakes with a fork. Check after 10 minutes, so as not to overcook, or the fish may be dry. When fish is done, top with the tomato mixture, and serve.

    I really enjoyed this dish. The mediterranean flavor was a nice change for me. I left the 'topping' off for my picky eater.

    I like all the ingredients in this recipe, but it was just not a good combination. The entire family ended up scraping the topping off and just eating the fish.

    @ Jenny. Try it with diced tomatoes instead of sun dried tomatoes for a lighter flavor.

    We loved it although I didn't have the capers. Just the sundried tomatoes and olives- super yummy! I had seconds for lunch today with basmati rice and spinach. Definitely adding it to my regular repertoire.
