Ingredients

  • 1 (cup) pineapple juice
  • 1/2 (cup) packed brown sugar
  • 1/3 (cup) light soy sauce
  • 2 (pound) chicken breast tenderloins or strips
  • skewers

Directions

  1. In a small saucepan over medium heat, mix pineapple juice, brown sugar, and soy sauce. Remove from heat just before the mixture comes to a boil.
  2. Place chicken tenders in a medium bowl. Cover with the pineapple marinade, and refrigerate for at least 30 minutes.
  3. Preheat grill for medium heat. Thread chicken lengthwise onto wooden skewers.
  4. Lightly oil the grill grate. Grill chicken tenders 5 minutes per side, or until juices run clear. They cook quickly, so watch them closely.

    I loved these. I baked them in the oven instead of on the grill, but still came out very good... My kids loved them as well!!

    @Laura~ Hi this is Chef Heather at Food on the Table. Great suggestion on baking these in the oven (for those who don't have a grill)! And those who do have a grill these would be perfect for those summer BBQs. Just curious what side dish did you serve with these?

    These were amazing! I had some boneless, skinless thigh pieces that I had pulled out, and found this recipe looking for something to do with them. I put the marinade together at about 3 in the afternoon, left the chicken while we went to my son's baseball game, and then fired up the grill as soon as we got home. They cooked quickly (always good on game nights!) and were a HUGE hit, even with my pickiest eater. Going into the favorites list! (Served my with corn on the cob - grill was already going, after all!)

    These turned out great. Had to use chicken breasts cut length ways. But did all 2lbs like said to. Ended up with 10 full size thick tenders and even with 2 extremely picky kiddos we only had 1 tender left. They absolutely loved them. Didn't want anything cooking inside to heat up house so I grilled the chicken and pineapple rings along with cooking baked beans on the side burner. All I did inside was heat up some corn. Will do again and again, especially since the kiddos loved it and it was so fast and easy. So little mess and that always matters to the hubby because he is the one left to clean up. ;)

    I added a 20 oz can of crushed pineapple to the marinade. LOVED it!!! 5 minutes on each side little too long on the grill. We'll back it up next time.Thoroughly enjoyed and so easy!!!

    @Brandy and Allison, good suggestions! I'm really glad you guys enjoyed this recipe. I find that using an instant-read meat thermometer is extremely helpful and will help keep you from overcooking your meat. Here's a link to a meat temperature chart: http://southernfood.about.com/library/info/blroast.htm. Also, remember that food "carry-over" cooks when you pull it from the heat source. So pull it a little undercooked and cover it with foil while the meat "rests" and it should be perfect every time!

    easy and delish recipe. Followed the recipe exactly, using the tenders (but w/out the skewers) and placed on a stove top grill pan. Will make again.

    Very good, easy recipe, used canned pineapple and made skewers with them along side and carrot fries (recipe link above). Healthy, easy meal

    I will make this again! Super good. I marinated the chicken for 5 hours and flavor soaked through the chicken nicely. Remember to soak wooden skewers before using...I forgot! In the end, it was fine! Enjoy!
