Ingredients
- 1 (tablespoon) dried rosemary, chopped
- 4 (whole) chicken leg quarters
- 1 (tablespoon) dried thyme, crushed
- Pinch salt and black pepper, to taste
- 3/4 (cup) dry white wine*
Directions
- Preheat oven to 350 degrees F. Rinse chicken leg quarters and pat dry. Coat liberally with salt and pepper. Place in one layer, skin side up, in a roasting pan or casserole dish. Sprinkle rosemary and thyme on skin side.
- Pour wine into bottom of pan. Roast in a 350°F oven for approximately 35 to 40 minutes or until juices run clear if pricked.
- Rest 10 minutes prior to serving.
- *chicken stock may be substituted for wine
