Ingredients

  • 4 (whole) chicken leg quarters
  • 1 (large) lemon, halved
  • 1 (tablespoon) lemon-pepper seasoning
  • Pinch salt, to taste

Directions

  1. Preheat oven to 375 degrees F.
  2. Cut chicken into 8 pieces; 4 legs and 4 thighs, cutting between the bones.
  3. Season chicken liberally with salt and lemon-pepper seasoning. Place in oven-proof casserole dish with the lemon halves.
  4. Bake in preheated oven for 35-40 minutes or until chicken is cooked through.
  5. To serve: place chicken on plates (1 thigh and 1 leg each) and squeeze juice from the roasted lemon halves with tongs over the top of the chicken.

    We have this in our regular rotation, and my husband loves it. I love to serve it with asparagus as the lemon goes so well with it. Those are good suggestions, Jackie!

    Made this for dinner tonight. Super easy and tasty, but I pulled the chicken out after the 40 minutes and the chicken was still slightly pinkish. Put back in for another 20 minutes. I don't know if it was my oven or what but 40 minutes wasn't long enough.
