Ingredients
- 1/3 (cup) 1/3 (cup) lemon juice
- 1 (pound) 1 (pound) medium shrimp, peeled and deveined
- 1 (to taste) salt and freshly ground pepper
- 1/4 (cup) 1/4 (cup) vegetable oil
- 2 (tablespoon) 2 (tablespoon) garlic cloves, minced
Directions
- In a shallow dish or resealable plastic bag, add all ingredients. Marinate for at least 15 minutes but no more than 2 hours as the lemon juice will begin to "cook" the shrimp.
- Remove the shrimp from the marinade and drain lightly on paper towels. Season with salt and pepper.
- In a large skillet, heat 2 tablespoons of the oil until shimmering. Add half of the shrimp and stir-fry over high heat until browned on both sides and cooked through, about 3 minutes total.
- Transfer to a platter and repeat with the remaining oil and shrimp. Serve immediately.
