Ingredients

  • 12 (ounce) lump crab meat
  • 1 (pint) grape tomatoes, cut in half
  • 1 (whole) avocado, diced
  • 1 1/2 (cup) frozen corn kernels, defrosted and roasted
  • 1/3 (cup) red onion, chopped
  • 2 (whole) limes, juiced
  • 2 (teaspoon) olive oil, divided
  • Pinch (ounce) salt and fresh pepper to taste

Directions

  1. Preheat oven to 400 degrees F. In a small bowl combine red onion, lime juice, olive oil, pinch of salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion.
  2. Toss corn in 1 tsp. olive oil and spread corn on a cookie sheet and roast in oven for 5 minutes.
  3. Mix all ingredients together. Adjust lime juice and salt and pepper. Serve.

    Artificial crab is usually made out of fish, so it's still not vegetarian.

    @Ashley, artificial crab is made from Surimi. Its a mild white fish that has been treated to taste like more expensive crustaceans such as lobster and crab. The treating process also changes the texture to more assimilate what we associate with lobster and crab. @Anonymous, you're completely right!

    Hi Anonymous! I am so happy to hear that this recipe was a hit even with the kiddos! For future reference this salad can be served several ways. Similar to chicken salad or tuna salad this crab salad can be enjoyed all on it's own, on a bed of lettuce, with crackers, or sandwiched between two slices of rye bread.

    Loved this dish! We put some red bell pepper in it for added crunch and flavor. We then ate it with orzo pasta. Delicious!
