Ingredients

  • 4 (8.0 ounce) boneless skinless chicken breast
  • 2 (10.0 ounce can) Enchilada sauce
  • 8 (6 inch) corn tortillas
  • 1 1/2 (cup) low fat chedder cheese
  • 1 (cup) low fat sour cream

Directions

As promised, this was easy to make.. When I dipped the tortillas in water they fell apart on me, so I popped them in the microwave one by one for about 10 seconds and they came out perfectly pliable. The dish was a hit! I used the cooking creme because I dont like sour cream but I got the same effect. I also made a side dish of sauteed corn, red and green bell peppers and cilantro. The kids LOVED it! I'll make it again...

I added a can of fat free cream of chicken soup, instead of the sour cream, to the chicken and enchilada sauce to make it creamy. Green onion, cumin, chili powder... YUMMY!!

I also softened my tortillas by dipping them in the enchilada sauce, they break apart a bit when you roll them, but they are still fantastic!!

I didn't get enough enchilada sauce, but they still turned out ok. I also used whole wheat tortillas.

My husband loved them. I made beef enchiladas and cooked the beef and used beef broth to moisten the tortillas.

The texture and taste was good. As others mentioned above, it needed more spices. I made according to recipe. I will definitely make again and try some of the spice suggestions above.

Don't forget to spray your cooking dish! My enchiladas all stuck to the bottom the first time I made this. I will definitely try some variations on the mixture in the future. My family loves this recipe!

This recipe has become a staple at our house. Easy and goes a long way. Even my grown daughters have made this one of their staple dinners. It does need a little extra spicing up however. Play with it a little for a great dinner.

I think this would be tastier if the chicken was cooked a different way. Boiled chicken is just gross (to me). I thought it was ok and easy....it just needs improvement to the chicken flavor.

Tastes great! I served with black beans as side and some extra sour cream dolloped on top. Husband LOVED this meal and wants me to make it weekly! Kids enjoyed it too. Shredding chicken took a few minutes longer than expected and several tortillas ripped while rolling them up.
