Easy Chicken Enchiladas

Ingredients

  • 4 (8.0 ounce container) boneless skinless chicken breast
  • 2 (10.0 ounce can) Enchilada sauce
  • 8 (6 inch) corn tortillas
  • 1 1/2 (cup) low fat chedder cheese
  • 1 (cup) low fat sour cream

Directions

  1. Preheat oven to 350 degrees F. Boil chicken in water for 10 minutes or until cooked through. When cool enough to handle, shred chicken with two forks. Mix chicken with one cup of the cheddar cheese and sour cream. Season with salt and pepper.
  2. Soften corn tortillas for 1-2 seconds in the water used for cooking the chicken. Place 3-4 tablespoons of the chicken mixture in the center of the tortilla and roll up like a cigar.
  3. Pour 1/2 cup of enchilada sauce into a oven-proof baking dish. Place rolled up tortillas in baking dish side by side. Cover with remaining enchilada sauce. Sprinkle remaining cheese over top and bake 30 minutes.

    My family loved this. So good and easy. I baked my chicken with some seasoning mix I had on hand and shredded it then softened my corn tortillas in oil. Will be making this again for sure.

    As promised, this was easy to make.. When I dipped the tortillas in water they fell apart on me, so I popped them in the microwave one by one for about 10 seconds and they came out perfectly pliable. The dish was a hit! I used the cooking creme because I dont like sour cream but I got the same effect. I also made a side dish of sauteed corn, red and green bell peppers and cilantro. The kids LOVED it! I'll make it again...

    I added a can of fat free cream of chicken soup, instead of the sour cream, to the chicken and enchilada sauce to make it creamy. Green onion, cumin, chili powder... YUMMY!!

    I also softened my tortillas by dipping them in the enchilada sauce, they break apart a bit when you roll them, but they are still fantastic!!

    Don't forget to spray your cooking dish! My enchiladas all stuck to the bottom the first time I made this. I will definitely try some variations on the mixture in the future. My family loves this recipe!
