Sun Dried Tomato Chicken Bake

Ingredients

  • 4 (8.0 ounce) boneless skinless chicken breasts halves
  • 1 (8.0 ounce jar) sun dried tomatoes in olive oil, julienned
  • 4 (clove) garlic, sliced thin
  • 2 (teaspoon) dried basil
  • (to taste) salt and pepper

Directions

  1. Preheat oven to 375. Place the chicken breasts in a large glass baking dish. Sprinkle with the dry spices and mix well. Sprinkle the sliced garlic on top and spread the sun dried tomatoes and the olive oil that it’s in the jar over the entire dish. Seal tightly with tin foil and bake for 20 minutes. Remove the tin foil and bake for another 15 minutes or until the chicken is no longer pink in the middle.

  • I really liked this dish. It reminded me of another I make with sausage, so I served it with penne pasta tossed with feta and broccoli. I mixed the chicken with the tomatoes and some of the sauce it makes all up on my plate with the pasta. My 2 year old ate everything separate, and my husband said it was a keeper! Great dish overall!

    Followed the directions to the letter, but the sundried tomatoes burned so badly that I had to toss most of the dish.

    Erin, if you try this again try cooking the chicken at 350 degrees instead of 375. Also, try keeping the chicken covered with the foil the whole time or adding the tomatoes halfway through cooking to prevent burning.

    I made this tonight and it was so good! I'd salt and pepper the chicken a bit next time before I add the basil and tomatoes. I found that the tomatoes and garlic were really good if you ate them with the chicken, but if you're kind of picky and take the topping off, you're left with just basil chicken and it could have used more flavor. But this is one recipe I plan to try again! My 2 year old daughter actually ate all of her chicken, which is very rare! She loved it so it's a keeper for our family.

    I made this a few nights ago and it was sooo tasty! Also a big hit with my husband. I agree that all the oil was too much, but that's easy to fix next time!
