Salmon baked in Foil with Green Beans and Pesto

Ingredients

  • 2 (cup) green beans
  • 2 (whole) lemons, halved
  • 4 (8.0 ounce fillet) salmon fillets, skin on
  • 4 (tablespoon) prepared pesto
  • 4 (teaspoon) Extra Virgin Olive Oil
  • (to taste) sea salt and freshly ground pepper

Directions

  1. Preheat your oven to 400. Trim the beans by cutting off the stalk ends and leaving the wispy tips on. Halve both of the lemons.
  2. Pull out 4 sheets of aluminum foil, each about a 14" long. Put a handful of green beans in the middle of the foil. Lay a salmon fillet, skin side down, across the beans and spoon over a good tbsp of green pesto. Drizzle with 1 tsp olive oil. Squeeze over juice from one of the lemons, and season with salt and pepper. Pull the aluminum foil edges together and scrunch them up to seal the parcel. Repeat these steps to make the other 3 parcels. Place foil parcels on a sheet pan.
  3. Put the baking sheet into your oven and cook for 15 minutes. Remove the pan from the oven and let it stand for a minute before carefully unwrapping it. Either serve the parcels on plates as they are or carefully unwrap them before serving.

    I was really disappointed with this recipe. The beans were no where near cooked and I don't think the taste of the salmon would have been any different than if you'd grilled the salmon and just added pesto. We will not be making this one again.

    The lemon was not present in the fish, and overpowering in the beans. I plan to cook this again and serve the lemons as a garnish instead of including them in the foil. Otherwise, it was delicious!

    I agree with the other comment regarding the lemon flavor in the green beans, but not in the salmon. I will try to make to again and squeeze the lemon after. The green beans were great; crunchy and had so much flavor with the lemon, pesto and extra virgin olive oil. I love that this is a quick dish with an added side that cooks together with the main dish.

    I had never used pesto before. Bought it, smelled it and was skeptical but followed the recipe to the letter. This was an excellant meal, great flavor & super easy. We had brocolli with ours.

    I liked the pesto with the salmon, but I should have cooked it a bit longer. Also I did not like the green beans with it....they were raw. I will fix it again w/o the green beans and linger in the oven.

    Great recipe!! I steamed my beans in the microwave first for about 8 minutes and then baked everything in a dish. It turned out delicious and was more presentable for company. They loved it!!
