Ingredients

  • 1 1/2 (pound) chicken tenders, (about 16)
  • 16 (slice) bacon, center cut strips
  • 3 (tablespoon) honey
  • 2 (teaspoon) coarse mustard
  • 1 (teaspoon) fresh lemon juice
  • (to taste) salt and pepper

Directions

  1. Preheat oven to 425 degrees F.
  2. Combine 3 tbsp honey with 2 tsp coarse mustard in a small bowl. Add lemon juice and mix.
  3. Wrap the bacon around the chicken strips. Place them in a roasting tray or on a cookie sheet. Brush the chicken with 1/2 the honey/mustard mixture.
  4. Bake them in a preheated oven at 425F (225C) for 13-15. Until the bacon is crispy.
  5. Serve with remaining honey/mustard sauce.

    @Lisa, I suggest that you season the chicken with salt, onion powder, garlic powder and pepper for more flavor.

    I marinated mine in Italian salad dressing for an hour in fridge. Also when i roast chicken or turkey i pour dressing on top of bird

    Quick and easy to make. Kids and husband liked. I used 1/2 slice of bacon on each chicken tender to reduce the amount of sodium and fat. I'll make this again.

    This was great! Kids and hubby loved it. I used the garlic powder, onion powder and pepper preparation Chef Leslie suggested, and even the super-picky 8-year-old asked for seconds. Great honey mustard sauce too!

    @Anonymous, you can amp up the flavor on this by marinating it in Italian dressing or season the fish with more herbs, such as marjoram, terragon, or thyme. Also, you can add garlic powder or onion powder to the chicken.
