Ingredients

  • 3 (tablespoon) soy sauce (use wheat free tamari for gluten free)
  • 2 (tablespoon) brown sugar
  • 2 (tablespoon) sesame oil
  • 1/2 (teaspoon) ground ginger
  • 1 (teaspoon) garlic powder
  • 4 (8.0 ounce) skinless, boneless chicken breast halves, cut into 2 inch pieces
  • 1 (10.0 ounce can) pineapple chunks, drained

Directions

  1. In a shallow glass dish, mix the soy sauce, brown sugar, sesame oil, ginger, and garlic powder. Stir the chicken pieces and pineapple into the marinade. Mix until well coated. Cover, and marinate in the refrigerator at least 2 hours.
  2. Preheat grill to medium-high heat.
  3. Lightly oil the grill grate. Thread chicken and pineapple alternately onto skewers. Grill 15 to 20 minutes, turning occasionally, or until chicken juices run clear.

    you can marinate it overnight if you don't add in the pineapple. the acid in the pineapple ate away at the chicken to create a paste.

    I never recommend marinating poultry overnight when you're using anything with a lot of acid in it, Aaron. Thanks for your input.
