Simple Meatloaf

Ingredients

  • 1 (pound) lean ground beef
  • 1 (package) sleeve crushed yellow crackers (such as Ritz)
  • 1 (6 ounce can) tomato paste
  • 1 (whole) egg
  • 1/3 (cup) ketchup
  • 1 1/2 (teaspoon) salt
  • 1 (teaspoon) pepper

Directions

  1. Combine first four ingredients in a bowl and mix. Season with salt and pepper.
  2. Form the mixture into a loaf shape on a cookie sheet.
  3. Press a small groove into the top of the meatloaf and fill with ketchup down the the length of it.
  4. Cook in a 350 degree oven for 30 minutes, or until cooked through.

    This was definitely super easy, though it lacked a bit of taste. I would definitely add some salt and pepper next time, and possibly an onion soup packet or something like that in place of some of the crackers... Not bad though considering how easy it was.

    Deborah, you can defiantly add a packet of dried onion soup mix, meatloaf seasoning mix, or Italian or ranch salad dressing seasoning mix to this recipe to add some flavor. Also try adding some dried Italian seasoning, fresh or dried parsley, chopped fresh garlic or onion, dried onion or garlic powder, or even substituting flavored bread crumbs for the crackers.

    @Canaan, I always add a chopped onion or shallot and fresh garlic to my meatloaf to make it more flavorful.

    I realized after I made it that I usually add Worcestershire, onion, or a ranch packet to meat to make it more flavorful. I just wasn't thinking.

    @Canaan, no worries. You can spice it up on the plate with a sauce or salt and pepper, maybe a little cayenne? Or, make a glaze with mustard and ketchup and Worcestershire and slather it on.

    Another good glaze you to try: 1/2 cup ketchup, 1 teaspoon ground cumin, Dash Worcestershire sauce, Dash hot pepper, sauce. Just mix it all together and brush the glaze on the meatloaf after it's been cooking for about 10 minutes. Meatloaf is also a great way to sneak vegetables in for your kids. Grate an onion and a couple of carrots and mix it in with the meat. They'll love it and never know it was there!

    We tried it, and I can say that it did lack flavor. I think it was the tomato paste. My own meatloaf recipe (from my mom) is with the packet of french onion soup. So I think I'll skip the tomato and go back to my other recipe

    Hi Carlyn. I am sorry to hear that this was not your favorite. In the future the comment section of the recipes are a great place to find chef and user comments/suggestions for adding flavor to dishes and side dish recommendations. But it does sound like you love your Mom's recipe, maybe you could share it for others to try?

    My son & I didn't like this recipe . I think the tomato paste was the problem. I did add an onion.... Just too plain.

    30 minutes at 350 is not nearly enough time to cook this. I ended up needing to put it back in for another 10 minutes and upping the temperature to 375 after the first 30 minutes.

    I prepared the recipe pretty much as is except, instead of ketchup in the middle I added a load of Sweet Baby Ray's BBQ sauce. My roomies loved it! I especially enjoyed the tomato taste.
    Also, I used lean turkey!

    I followed this recipe to a T and I must say...it was rather disgusting. From now on, I think I'll stick to plain ole italian bread crumbs!

    I doctored mine a bit, based on comments here. Added 1/2 Tsp minced garlic (about 1 clove), 1 Tsp Worcestershire sauce, a handful of fresh chopped parsley (just bc I had it and needed to use it), 1/4 Tsp pepper, 1/2 Tsp salt. Everything else I used straight from recipe. Cooked at 350 for about 50 minutes. Middle was a bit squishy, but not undercooked. Too much tomato paste? I may try it again, with a few more modifications. Wasn't my fav, but my son and hubby enjoyed it. ~Jen~

    I made this in the morning and then had my husband put it in the oven after work. Everyone ate it. it was a different tasting meatloaf because of the tomato paste, but I enjoyed it.
