Ingredients

  • 12 (ounce) elbow macaroni
  • 2 (tablespoon) dijon mustard
  • 1 1/4 (cup) sour cream
  • (to taste) salt and black pepper
  • 1 (small) onion, finely chopped
  • 2 (cup) extra sharp cheddar cheese, grated

Directions

  1. Heat over to 400F. Cook the pasta for half the time recommended on package.
  2. Meanwhile, in a large bowl, whisk together the mustard, 1 cup of sour cream, 1 cup cheese and 1/2 tsp each salt and pepper
  3. Add the pasta to the bowl and toss to coat. Transfer the pasta mixture to a shallow 9x13 baking dish and bake until beginning to brown, about 10 minutes.
  4. Remove the baking dish from oven and fold in the remaining cup of cheddar and 1/4 sour cream. Return to the oven and bake until golden brown, 15 to 20 minutes more. Serve with freshly cracked pepper.

This was very good and very easy to make. I added chunks of ham in mine and put parmesan cheese on top.

@Kim, this is a user submitted recipe so I don't know that user's initial intentions were with the onion. I would sweat the onion in 1 T. of butter and a little salt over medium-low heat until translucent; about 5 minutes. Then I would stir it into the cooked pasta.

Darlene, at the top of the recipe it does indicate that this makes four portions, and you can see the nutritional data at the bottom. Please bear in mind, though, that the nutritional data is estimated.

Very good - learned that you have to stir it a lot to get the full flavor of the meal.

Yes, you would definitely want to get the sour cream and cheese fully incorporated for this to be its best.

  • I really didn't like this. It' turned out very dry and flavorless. I added about 1/4 cup butter and about 1 cups milk and stirred it over heat on the stove (after baking) to try to rescue it. It was better, then, but definitely not worth making again. I think I'll stick with the traditional recipes.

the instructions also don't say when and where both cups of cheese go.

@Anonymous- Thank you for your comment. You are right, the original directions only mention adding 1 cup of cheese in step 4. I have edited the directions to be more clear and include adding cheese in step 2 as well.
