Sausage Zucchini Boats

Ingredients

  • 2 (medium) zucchini
  • 1 (15.0 ounce can) diced tomatoes
  • 1 (teaspoon) Italian seasoning
  • 1 (pound) chicken sausage, casings removed
  • pinch salt and black pepper, to taste
  • As needed cooking spray

Directions

  1. Preheat oven to 450
  2. Spray cooking spray onto a large non-stick skillet and heat over medium-high heat. Crumble chicken mixture into preheated skilled and break into small pieces with a spatula. Cook and stir sausage until browned and no longer pink; about 5 minutes.
  3. Stir in tomatoes, salt, pepper and Italian seasoning; heat through. Remove from heat and set aside.
  4. Cut ends from each zucchini and discard. Cut zucchini in half, lengthwise. With a 1 inch melon baller or measuring spoon, carefully scoop out center seeded area of each zucchini half, forming a boat.
  5. Spray cooking spray onto a baking sheet and place each zucchini boat on baking sheet. Sprinkle zucchini with salt and pepper. Divide sausage mixture evenly into the center of each boat. Cook for 20-25 min until zucchini is tender. Serve.

    Nice and tasty recipe. Our two year old even liked it. The sausage we used was a three cheese chicken sausage, which worked really well with this dish. Instead of the can of diced tomatoes, we used tomatoes that we had canned from our garden.

    Added a can of white beans and topped with cheese and they were yummy!

    Very tasty. I topped them with shredded mozzarella in the last 2 minutes. There is a lot of meat. I would recommend mixing on some rice.
