Linguini with Alfredo Sauce

Ingredients

  • 4 (tablespoon) Butter
  • 2 (tablespoon) Cream Cheese
  • 3 (cup) Heavy Cream
  • 1 1/2 (teaspoon) Garlic Powder
  • (to taste) salt and pepper
  • 1 (cup) Parmesan Cheese
  • 1 (pound) Linguini pasta

Directions

  1. In a medium to large saucepan melt the butter over medium heat.
  2. Add the cream cheese and whisk to smooth and melted. Whisk in the heavy cream. Season with the garlic powder, salt and pepper.
  3. Bring to a good simmer and whisk frequently until sauce thickens, around 25 minutes.
  4. Meanwhile, prepare pasta as per instructions on the package. Drain and reserve.
  5. Remove from heat and stir in cheese. Toss sauce with pasta and serve.

    This turned out great! I used whole wheat linguini and added some smoked sausage and mixed vegetables to make it a meal. The family loved it!

    Hi Brandy! If you are looking for a "lighter' substitute for the heavy cream I recommend using half-and-half. However, using the half-and-half in place of the cream may result in a thinner sauce. Other suggestions are using evaporated milk or pureeing cooked cauliflower with a little broth or milk to form a creamy white sauce.

    I always make my Alfredo sauce with fat free 1/2 and 1/2 and just add a little cornstarch

    @Anonymous, thanks for sharing your tip. Cornstarch is a great thickener ("liason" is another word for thickener). For those of you who have used cornstarch to thicken as sauce and it became lumpy, here's a tip: make a slurry. Add the cornstarch to a little water and stir until all the lumps are gone, then add to your sauce for thickening. I always keeps a small lidded jar in my cupboard for just this purpose.
