Ingredients

  • 1 1/2 (cup) basil pesto
  • 2 (12 inch) pre-baked pizza crust
  • 4 (cup) chicken breasts, diced
  • 4 (cup) shredded mozzarella
  • 1/2 (cup) Red Bell Pepper

Directions

  1. Preheat oven to 425 degrees. Dice chicken breast and cook in skillet and set to the side when cooked through. With separate knife, dice the red peppers.
  2. Spread pesto over pizza crust.
  3. Cover in shredded mozzarella.
  4. Cover pizza with chicken and red pepper.
  5. Place pizza in oven for 12 to 15 minutes.

    This was lovely! I really enjoyed it, though we'd never have used that much pesto. My husband used maybe a third of whats called for here. At any rate it was delicious! Thanks for the good meal!

    I didn't use a pre-baked crust, I just used a pillsbury pizza crust. Also, I only used as much pesto that I had on hand, and it was probably not a whole cup. Next time, I may add artichokes and maybe sun-dried tomatoes to counter the pesto's intensity. We liked it. I especially loved how easy it was.
