Ingredients

  • 2 2 chicken breasts
  • 2 2 links chorizo sausage
  • 1/48 (ounce) Cumin to taste
  • 1/48 (ounce) Chili powder to taste
  • 8 8 tortillas
  • 1 (ounce) 1 oz Velveeta
  • 1 (can) 1 can diced tomatoes and chilis

Directions

  1. Clean chicken thoroughly, cut into 1/4" strips, and set aside.
  2. Heat pan over medium high heat, remove chorizo from casing. Pan fry chorizo breaking into smaller pieces until cooked completely. Remove form pan and set aside.
  3. Cook chicken in same pan until cooked completely through. May add spices such as cumin, cayenne pepper, paprika, chili powder to taste. (it doesn't take much. I usually use a dash here and there.)
  4. Add chorizo back to pan and cook till warm.

  7. I simply use a modified Velveeta queso recipe. you don't need a lot of sauce but you can make more for use on chips.
  8. slowly melt 1oz Velveeta over medium low to low heat(chese will skin if you melt it too fast.)
  9. once Velveeta is melted add Tomatoes and chilis. I usually use about a quarter can but that's for two of us.
  10. Mix together adding cumin and chili powder to taste. I usually add a little garlic powder or garlic salt, too.
  11. Warm tortillas in microwave (15-20 seconds) and serve.
