Ingredients

  • 1/2 (cup) freshly grated Parmesan cheese, divided
  • 3 (tablespoon) melted unsalted butter
  • 1 Juice and zest of one small lemon (about 2 tablespoons juice)
  • 1/2 (teaspoon) dried basil
  • 1/2 (teaspoon) dried tarragon
  • 1/8 (teaspoon) onion powder
  • 4 (6 to 8 ounce) farm-raised tilapia fillets

Directions

  1. Combine 1/4 cup Parmesan cheese with remaining ingredients (except fish) and season with salt and pepper. Coat fillets with mixture and place in baking dish or shallow platter and let marinate for 15 to 20 minutes. Preheat broiler. Transfer fillets to a foil-lined broiler pan. Spoon a few tablespoons marinade on top and sprinkle with remaining Parmesan. Broil 4 to 6 inches from heat until topping is lightly browned and fish flakes easily with a fork, 5 to 8 minutes.

    This was actually not one of my favorites. None of the kids ate it either. It seemed to just have a strong taste to it.

    We loved this one. Even our 2 yr old niece ate it. I was out of tarragon, so I replaced it with dill...Yummy and EASY!

    Served it with portabella mushrooms stuffed with spinach and mozzarella and drizzled with olive olive plus salt and pepper (baked them at 350 for 25 minutes)

    Another good side for this one would be broiled tomatoes. I mince some shallot and garlic, mix with seasoned bread crumbs and a little parmesan cheese, season with salt and pepper and drizzle with melted butter or a good olive oil. Broil about 6 inches from the heat source until browned on top.

    I really like this! Easy and quick. Served rice and broccoli with it. But the tomatoes would be good, too. I calculated the calories to be 231, 14.2 grams fat.

    Very easy and very tasty. I've always cooked our fish with just lemon, salt, and pepper. This recipe was a good change. I did use olive oil instead of butter, so it probably could have tasted even better. Oh, and I used store brand grated Parm, so I'm sure it's better with fresh grated. I will definitely be making this again.
