Baked Southwestern Tilapia

Ingredients

  • 1 (teaspoon) garlic powder
  • 1 (teaspoon) chili powder
  • 1/4 (teaspoon) cayenne pepper
  • 4 (6-ounce) tilapia fillets
  • 2 (tablespoon) extra virgin olive oil, divided
  • 1 (lime) lime, cut into wedges

Directions

  1. Preheat oven to 450°F. In a small bowl, mix garlic powder, chili powder and cayenne. Season fish with salt and pepper on both sides. Sprinkle spice mixture evenly over both sides of tilapia.
  2. Coat a baking sheet with 1 tablespoon of the oil. Arrange tilapia in a single layer on the baking sheet. Drizzle tilapia with the remaining tablespoon of oil and bake until golden brown and flesh begins to flake, 7 to 9 minutes. Serve with lime wedges on the side.

    @Anonymous, I recommend decreasing the chili powder to 3/4 t. and the cayenne to 1/4 t. to decrease spiciness.

    Great--kids loved it, too. I used a baking spray to coat the pan, though, for fewer calories, and drizzled a little olive oil on top before baking. Easy and tasty!

    @Cheryl, using baking spray is a great alternative to drizzling with oil. It will still keep your fish from sticking and reduce the fat content. This technique can be implemented anytime a recipe calls for oil to coat something...just a squirt of cooking spray and you're good to go. Thanks for sharing.

  • not sure where the rest of my comment went... that's supposed to say 'served with Mexican Red Rice and steamed broccoli'. The rice was a good compliment to the fish prepared this way.
