Ingredients
- 1 Spinach
- 1 Ricotta cheese
- 1 Alfredo sauce
- 1 Lemon
- 1 Nutmeg (I substituted ground ginger cause I didn't have nutmeg)
- 1 Chicken breasts
- 1 Prosciutto (I skipped this and it still tasted great) :o)
- 1 Swiss cheese
- 1 Seasoned bread crumbs (optional, but I used them)
Directions
- Preheat oven to 425. Squeeze excess liquid from one 10-oz pkg of thawed frozen spinach. Combine with 1/2 cup ricotta cheese, a generous 1/4 cup alfredo sauce, squeeze of lemon, pinch of nutmeg, kosher salt, and freshly ground pepper. Place 2 skinless, boneless chicken breast halves between 2 pieces of plastic wrap. Whack with the back of a wooden spoon until the surface area nearly doubles. Place in a baking dish. Season with kosher salt and freshly ground pepper. Slather some additional alfredo sace over each breast followed by prosciutto, the spinich mixture, and sswiss cheese. Top with seasoned bread crumbs. Bake for 15-20 minutes.
